The Experience
Chef Jacques Flécher runs a fully turnkey private-chef operation from his Grande Saline base, serving clients across St Barth from Gustavia to Colombier. Trained in France and at the Michelin-starred Homewood Park Hotel before relocating to the island in 1999, he cut his Caribbean teeth at La Route des Boucaniers and as head chef of L'Indigo at Le Guanahani & Spa. Since founding Villa Chef St Barth in 2013 he has built a discreet client list of villa renters, second-home owners and yachts who want restaurant-level cooking without leaving the terrace. A booking covers everything: menu design over email or WhatsApp, market shopping at dawn in Gustavia, cooking in your villa kitchen, plated table service, and — the part guests always mention — a spotless kitchen when he leaves. He works three culinary registers (modern French, French-Caribbean fusion, and authentic Creole) and will happily build a fourth register around dietary needs, kids, or a specific bottle of wine you brought from home.
What to Try
Order the fusion tasting menu if you want to see the chef at his most personal — spiny lobster from the morning boats paired with passion-fruit beurre blanc, christophine gratin, or a Creole-spiced snapper with vanilla-rum jus. Sunset BBQs on the pool deck (whole grilled fish, tapas, punch cocktails) are the easiest crowd-pleaser for groups of six or more, and the gourmet brunch is quietly the best-value booking on the island. Foodie couples should ask about the private cooking class — an in-villa half-day where Jacques teaches you to butcher a langouste and finish a proper beurre blanc.
Insider Tip
Book at least ten days ahead in high season (mid-December through New Year and February school holidays are essentially closed unless you're already a repeat client), and give Jacques a rough budget per person plus one or two ingredients you love — he builds a far better menu from a loose brief than from a rigid one. If you're on a yacht in Gustavia harbor rather than in a villa, say so up front; he adapts the mise-en-place to a galley without missing a beat.
