Mickaël Michel spent fifteen years cooking on private yachts across the Caribbean and Med, so his contemporary French menus lean on whatever came off the Corossol boats that morning — snapper crudo brightened with local lime, langouste finished in vanilla-infused butter, wagyu with a Créole jus that never tips into sweetness. Pastry chef Jérémy Rineau, twenty years between the Accor group and Ponant's luxury cruises, handles the second act: think mango-passion vacherins, warm chocolate soufflés, and house-churned ice creams that arrive at the table still setting. They plan the menu with you over WhatsApp days in advance — dietary asks, kids' preferences, wine pairings, even the plate colors — then show up, cook in your kitchen, serve you course by course, and disappear leaving the counters spotless. It is the closest thing to a fine-dining restaurant that has no other tables.
