Why Go

Tucked into the Tropical Hôtel high above Saint-Jean bay, Romi is the island's most convincing case for staying in the hills at dinner — a candlelit, plant-wrapped patio where the kitchen bounces from Bangkok street stall to Lima market to Costa Brava coastline in a single tasting.

The Experience

Arrive just before sunset and take the drive up to Les Hauts de Saint-Jean, where the road narrows and the resort gardens close in overhead. The room, designed by Oscar Lucien Ono with murals by Raphaël Schmitt, feels less St Barth beach club and more tropical opium den — low light, textured woods, ceramic hanging lamps, a bar that hums with mixology talk. Service is relaxed but polished, the soundtrack drifts from acoustic sets early to a proper DJ later, and by 10pm the terrace has that unmistakable island tempo where dinner slides sideways into a nightcap. It's a full-length evening, not a two-course pit stop.

What to Try

Start with the indo-tapas at the bar — small, punchy plates built for the cocktail list, which leans heavily on citrus infusions and aromatic pairings. The Rendang, a slow-cooked Sumatran beef curry, is the dish regulars come back for; go deep-flavoured and let the kitchen's spice work show. The satay selection is the other must-order, ideally shared, and any of the fire-and-steam signatures the server points to that night. Ask what the mixologists are pouring off-menu — the best cocktail is usually the one they've just been tinkering with.

Insider Tip

Book the terrace, not the interior, and ask specifically for a table on the garden edge — the tropical planting muffles the room and makes it feel like a private dinner even on a full night. Reserve through SevenRooms or ZenChef at least a week ahead in high season (Christmas/NYE weeks are locked up months out), and plan for a taxi both ways: the road up is steep, unlit and not something to negotiate after a second cocktail.
