Guests drift in from the beach to find the counters set, wine chilling and canapés plated — usually raw tuna, langouste bites or a tartare that leans on whatever came off the boat that morning. Dinners run long and easy: three to five courses that move from the Caribbean (accras, ceviche, grilled snapper) to the French classics you'd expect from a Provence-trained cook (a rack of lamb with jus, a soufflé, a proper tarte fine).
