When one of the world's most decorated chefs vacated his harbor-view perch in Gustavia, everyone in St Barth wondered who would dare take it on. Pablo answered in November 2025 with a two-level reinvention that trades hushed formality for barefoot-luxe swagger — ceviches and wagyu tacos on the rooftop, a rum-soaked, tropical-lit bar rumbling downstairs until late.
The Experience
You climb from the Rue du Bord de Mer into an airy, open room that keeps the bones of the old Joël Robuchon space but strips away the ceremony. Upstairs, the rooftop is the whole point: linen-shirted crowd, sun slipping behind the sailboats in the port, plates designed for the middle of the table and shared with your hands as often as with forks. Downstairs, once the plates clear, the ground-floor bar takes over — DJ, light show, rum flights and signature cocktails that pull the evening well past midnight. It manages to feel both like a proper gastronomic dinner and the pre-game for one of Gustavia's better nights out.
What to Try
Order across the raw bar first — the ceviches, carpaccios and sashimis are where the kitchen's 'Mediterranean-with-contemporary-flair' brief actually lands, all citrus, olive oil and clean fish. The wagyu tacos are the signature crowd-pleaser and worth the splurge. Ask the sommelier to steer you through the wine list (it leans French and serious), then migrate to the downstairs bar for a rum tasting or one of the house cocktails before you leave.
Insider Tip
Book the rooftop, not the ground floor, and aim for a table around 8:15–8:30pm so you're seated as the harbor lights come on — that golden window is the whole reason to eat here rather than at one of the beach clubs. Reservations run 24/7 through SevenRooms and the rooftop fills a week out in high season, so lock it in early. If you couldn't get a dinner table, come after 11pm for the downstairs bar only — no reservation needed and you still get a taste of the room.
