Why Go

Mark Iacono's fiercely guarded Carroll Gardens pizzeria almost never travels. That it landed in Saint-Barthélemy — in the old Mi Brasa space, no less — is the kind of only-on-St-Barth crossover the island quietly excels at. Come for the pedigree, stay because the char on the crust really is that good.

The Experience

You step off Rue de la France into a room built around the wood-fired oven — soft lighting, linen napkins, an intentionally hushed hum rather than a scene. The service leans warm-Italian rather than Caribbean-flashy, and the pacing assumes you're settling in for a proper two-hour dinner. It reads as a restaurant that would rather be very good than very loud, which is unusual on an island that often prefers the reverse. Dress is resort-elegant: linen and a decent shirt will do; nobody's turning up in swimwear, but you also don't need a jacket.

What to Try

The margherita is the litmus test and the reason the Brooklyn original has a two-hour wait — thin, blistered, hand-stretched, San Marzano-forward. Add the burrata to start (creamy, milky, dressed simply), an antipasti board for the table, and one calzone to share so you get both sides of the oven's repertoire. The fresh pasta plates are quietly excellent if you're not in a pizza mood, and don't skip dessert — the kitchen takes the sweets as seriously as the dough.

Insider Tip

Reservations are required at least 24 hours ahead and confirmed by email — the room is small and books out fast in high season, especially around New Year's and February regatta weeks. Ask for a table with a view of the oven; watching the pizzaiolo work is half the experience. If you're staying up in Colombier or Gouverneur, budget an extra 20 minutes for Gustavia parking after 7 PM.
