Why Go
Tucked into a jungle-thick garden just up the road from Grande Saline beach, Le Tamarin is the kind of place you settle into for lunch and reluctantly leave at sunset. A century-old tamarind tree canopies the terrace, lily ponds gurgle between the tables, and hammocks are strung up for the inevitable post-rosé collapse. It has been a St Barth institution since long before Instagram discovered it — and it still feels like a proper island secret rather than a scene.
The Experience
You arrive dusty from the beach in a swimsuit and a linen shirt, and no one bats an eye. The service is polished but unhurried, the soundtrack is low-slung French lounge, and the light filters green through banana leaves and ylang-ylang. Chef Jérôme Lebeau's kitchen sends out French-Caribbean plates that read simpler than they eat — fresh-catch fish, island citrus, a whisper of Provence. The wine list is deep (over 200 references), the cocktails are properly made, and the whole thing has that rare quality of feeling both special-occasion and completely low-stakes. Come for a starter, stay four hours.
What to Try
Start with the local fish tiradito or scallop carpaccio dressed in citrus, then work up to the slow-cooked octopus, grilled lobster, or the mi-cuit foie gras if you're feeling ceremonial. Regulars swear by the lobster ravioli and the tuna tartare. On the lighter end, the sashimi and simple grills are exactly what you want after a morning at Saline. Finish with a chilled Provençal rosé from the cellar and whatever fruit dessert the kitchen is running that day.
Insider Tip
Book at least a day ahead in high season (Nov–Apr) and ask for a table in the far garden near the lily pond, not the front deck — it's cooler, quieter, and the light through the tamarind canopy is unreal. Arrive around 1:30pm: the early beach crowd is leaving, and you can slide into the long, lazy afternoon service when the hammocks free up.

Location: Saline, near Grande Saline beach, St Barthélemy 97133. Open for lunch only (roughly 12pm–4pm), typically closed in the September low season — always confirm ahead. Reservations essential in high season, ideally 24+ hours in advance. Dress code: chic-barefoot; a cover-up over the swimsuit is fine. Cards accepted; expect upper-tier St Barth pricing. A rental car (or taxi) is the only real way in — there's no walking here from Gustavia.
