The Experience
Chef Fred trained in France under mentors from the Alain Ducasse and Michel Sarran orbits before setting up on St Barth more than two decades ago, and it shows in the calm, unfussy way his team takes over your kitchen. You choose the mood — a barefoot breakfast, a lazy poolside brunch, a tasting menu for six, a buffet for 60, a full week of in-villa catering — and Fred handles the sourcing, prep, plating, service and clean-up. The cooking pulls from French classical technique but leans light and modern, with easy detours into Italian pasta courses, Asian-inflected small plates and Caribbean seafood built around what came off the boats that morning. Because everything happens in your villa, dinner keeps moving at your pace: no reservation windows, no dress code, no rushing you off the table when the wine gets interesting.
What to Try
Ask about the SBH menu — his most local card, built around Caribbean fish, tropical produce and Creole accents that most visitors never get to try. The Asian tasting menu is the sleeper hit for groups who want something more playful than classic French, and the brunch service (fresh juices, viennoiseries, eggs cooked to order, a proper cheese and charcuterie spread) is worth booking at least once during a longer stay. For celebrations, let the team design a multi-course tasting rather than ordering à la carte — that's where the Ducasse-lineage plating really comes out.

Book Fred before you book your grocery run. Villa renters often stock the fridge first and then try to slot a chef in later, but Fred's team will handle the market shop themselves and pick better produce, fish and wine than you'll find at the supermarket — and because they cost the ingredients transparently, you often spend less overall than a DIY week plus one restaurant dinner. High season (Christmas, New Year, February) books out months ahead; shoulder season is where you can still grab him on 48 hours' notice.
